    When made properly with real ingredients and egg white, this is far more than a sweet almond cocktail. The modern version balances amaretto with bourbon and fresh lemon, topped with a silky foam.

    Ingredients

    Amaretto

    1.5 oz

    Bourbon whiskey

    0.75 oz

    Fresh lemon juice

    1 oz

    Simple syrup

    0.25 oz

    Egg white

    1 whole

    Instructions

      Add all ingredients to a shaker without ice (dry shake)

      Shake vigorously for 15 seconds to emulsify egg white

      Add ice and shake again until well chilled

      Double strain into a rocks glass over fresh ice

      Garnish with lemon wheel and cherries
